dc.descriptionThe cultivation of quinoa is recognized for its nutritional characteristics and easy adaptation to different agroecological conditions. The objective of this study was to collect and evaluate the postharvest activities of the quinoa crop in Cundinamarca. A participatory action methodology was used, through visits and interviews with selected producers in the department. Information was collected on the traditional postharvest stages of the Subachoque, Sibaté, Carmen de Carupa, Zipaquirá, Fusagasugá, Lenguazaque, Guasca, Guachetá and Chocontá regions. The process is described where it is evidenced that some stages are manual, however, most are technified, an analysis of the post-harvest system was carried out to identify the weaknesses, opportunities, strengths, and threats presented by the associations. In the community, they identified the required improvement actions and the impact of cultivation on the associations' family economy.en-US
dc.descriptionEl cultivo de la quinua es reconocido por sus características nutricionales y fácil adaptación a diferentes condiciones agroecológicas. El objetivo del presente estudio fue recopilar y evaluar las actividades poscosecha del cultivo de quinua en Cundinamarca. Se empleó una metodología de acción participativa, a través de visitas y entrevistas a productores seleccionados en el departamento. Se recopiló información sobre las etapas poscosecha tradicionales de las regiones de Subachoque, Sibaté, Carmen de Carupa, Zipaquirá, Fusagasugá, Lenguazaque, Guasca, Guachetá y Chocontá. Se describe el proceso donde se evidencia que algunas etapas son manuales, sin embargo, la mayoría están tecnificadas, se realizó un análisis del sistema poscosecha para identificar las debilidades, oportunidades, fortalezas y amenazas que presentan las asociaciones. Identificaron en comunidad las acciones de mejora requeridas y el impacto del cultivo en la economía familiar de las asociaciones.es-ES
