La cacaocultura en Colombia es considerada uno de los sistemas agrícolas más importantes. Las semillas de cacao son la materia prima en la preparación de un sin número de productos de chocolatería, sin embargo estas deben ser sometidas previamente a un proceso de fermentación y secado en los cuales se potencializa el sabor a chocolate y se forman los precursores de sabor y aroma que dan origen a las notas florales y frutales (Motamayor et al., 2008). De ahí la importancia de la fermentación. El objetivo de la investigación es acondicionar procesos de microfermentación mediante la validación de curvas de temperatura para garantizar una calidad integral del grano de cacao en tres genotipos ICS 95, CCN 51 y TCS 01, seleccionados de acuerdo a su tamaño de grano y genética, investigación que se desarrollará en el Centro de Investigación La Suiza, Agrosavia. Esperando como resultados obtener las curvas de temperaturas más eficientes para el proceso de fermentación, lo que permitirá desarrollar protocolos para la fermentación de microlotes que serán implementados en la caracterización de materiales genéticos en estudio y posteriormente ser implementados a gran escala, logrando dar valor agregado a unos de los productos de alta importancia en el país por su reconocimiento en el exterior como cacaos finos de sabor y aroma (Fedecacao, 2020). The objective of the research is to condition a micro - fermentation process through the validation of temperature curves to guarantee an integral quality of the cocoa bean in three genotypes ICS 95, CCN 51 and TCS 01, selected according to their grain size and genetics, research that will be carried out at the La Suiza Research Center, Agrosavia. Hoping as results to obtain the most efficient temperature curves for the fermentation process, which will allow the development of protocols for the fermentation of microlots that will be implemented in the characterization of genetic materials under study and later be implemented on a large scale, achieving added value to one of the products of high importance in the country for its recognition abroad as fine flavor and aroma cocoas (Fedecacao, 2020).
