dc.description.abstract | El trabajo se realizó en el municipio de Timaná, donde se desarrolló la evaluación organoléptica de la taza de café producido en sistema agroforestal (Guamo Inga ssp) y a libre exposición solar en la vereda Criollo, teniendo en cuenta que el café tiene relevante importancia económica, generando mayores ingresos a familias caficultoras y a todas las empresas que dependen de este producto como actividades de acopio, post cosecha, transporte, comercialización, exportación e industrialización. En el desarrollo de esta investigación se tuvo dos unidades de producción o tratamientos las cuales se sometieron a una evaluación de calidad sensorial. El proceso que se generó en el desarrollo de la metodología fue muy cauteloso, desde la recolección y beneficio, como despulpado, lavado y secado hasta obtener muestras para llevar a laboratorio de catación, donde se analizaron y se obtuvieron resultados significativos tanto para la zona del municipio de Timaná, como para el departamento del Huila, así como a todas las zonas productoras de café de Colombia y países productores de cafés especiales que requieren conocer cada vez este tipo de estudios en cada zona o hábitat donde se obtienen diferentes características de muchas especies de la fauna y flora que influyen en las producciones del café. Los resultados de esta investigación fueron mejores para el tratamiento a libre exposición solar. El cual presentó atributos como dulzura y acidez, así como agradables notas a caramelo-chocolate, cascara de naranja y manzana verde. Todo esto permitió una mayor puntuación en el análisis sensorial realizado por los catadores. | spa |

dc.description.abstractenglish | The work was carried out in the municipality of Timaná, where the organoleptic evaluation of the cup of coffee produced in the agroforestry system (Guamo Inga ssp) and free sun exposure in the Creole village was developed, considering that coffee has relevant economic importance, generating higher incomes for coffee growers and all companies that depend on this product as collection, post harvest, transport, marketing, export and industrialization activities. In the development of this research we had two production units or treatments which underwent a sensorial quality evaluation. The process that was generated in the development of the methodology was very cautious, from the collection and benefit, such as pulping, washing and drying until obtaining samples to take to the laboratory of sampling, where they were analyzed and obtained significant results both for the zone of the municipality of Timaná, as well as for the department of Huila, as well as all coffee producing areas of Colombia and countries producing special coffees that require to know this type of studies in each zone or habitat where different characteristics of many species are obtained of the fauna and flora that influence the productions of the coffee. The results of this research were better for treatment at free sun exposure. Which presented attributes such as sweetness and acidity, as well as pleasant notes of caramel-chocolate, orange peel and green apple.
