| dc.description.abstract | El presente análisis desarrollado busca diagnosticar los impactos ambientales que se van generando en cada uno de los procesos de comercialización y venta de leche, actividad económica que se realiza en la hacienda La Fortuna, teniendo en consideración los requisitos determinados en la norma ISO 14001:2015. El estudio ambiental nos remite al municipio de Entrerríos, específicamente en la vereda Toruro ubicada a 60 kilómetros de la ciudad de Medellín y a 8 kilómetros del casco urbano. Su extensión es de 22 hectáreas de terreno con características variadas que oscilan entre plano y ondulado, y a 2.350 msnm. La finca se encuentra ubicada en el departamento de Antioquia en lo que ha sido llamado el Cordón lechero, de ahí la rigurosidad en el cumplimiento la normatividad legal establecida en lo referente a la producción con calidad e inocuidad. El Instituto Colombiano Agropecuario ICA la ha certificado con hato libre de Brucelosis (desde 2.002), hato libre de Tuberculosis (desde el 2.006) y certificación en buenas prácticas ganaderas BPG (2011). La norma aplicada nos permite reconocer en cada uno de los procesos en qué aspectos se debe profundizar para hacer una intervención prioritaria pues si bien la actividad económica desarrollada se hace con fines productivos, no debemos dejar pasar que en algunos casos estas prácticas generan grandes problemas ambientales sobre todo cuando no se hace uso del buen manejo de los procesos. Se hace importante entonces identificar los elementos que intervienen en las actividades que se realizan en la finca, tales como infraestructura, tipo de ganado bovino, insumos agrícolas entre otros los cuales son determinantes en la etapa de producción y rentabilidad de la leche. Ésta actividad se hace crucial en la economía local dado a la ubicación privilegiada en la que se encuentra pues cuenta con pastos idóneos para desarrollar plenamente ésta labor, y dado que es la profesión insigne del sector se debe hacer seguimiento para controlar los daños ambientales que a posteriori puedan acarrearse. | spa |

| dc.description.abstractenglish | The following analysis seeks to diagnose the environmental impacts that are generated in each of the processes of marketing and sale of milk, economic activity that takes place in the Hacienda La Fortuna, taking into consideration the requirements determined in ISO 14001: 2015. The environmental study refers us to the town of Entrerríos, specifically in the Toruro district located 60 kilometers from the city of Medellín and 8 kilometers from the urban center. Its extension is 22 hectares of land with varied characteristics that oscillate between flat and undulated and is 2,350 meters above sea level. The farm is located in the department of Antioquia and It is part of the dairy condom, hence the strict compliance with the legal regulations established in relation to production with quality and safety. The Instituto Colombiano Agropecuario ICA has certified it with a free herd of Brucellosis (since 2002), a herd free of Tuberculosis (since 2006) and a certificate in good cattle practices BPG (2011). The applied standard allows us to recognize in each of the processes in which aspects we should be deepened to make a priority intervention because although the economic activity developed is done for productive purposes, we must not let go that in some cases these practices generate great environmental problems especially when there is no use of good process management. Therefore, it is important to identify the elements that intervene in the activities carried out on the farm, such as infrastructure, type of cattle, agricultural inputs, among others, which are determining factors in the production and profitability stage of the milk. This activity is crucial in the economy, taking into account the privileged location in which it is located because it has suitable pastures to fully develop this work, and given that it is the distinguished profession of the sector, monitoring must be carried out to control environmental damage a posteriori can be carried. | spa |
