Description:	El proyecto aborda los retos y desafíos de la industria 5.0 para la conservación del alimento Leche Humana (LH) a través de un enfoque de responsabilidad social orientado a la alimentación de población neonatal de la Unidad de Cuidados Intensivos Neonatales UCIN al garantizar la seguridad alimentaria y la estandarización de procesos. Se identificó la situación actual del BLH del Tolima, se detectó que la leche humana donada (LHD) que ingresa al procesamiento fue de 353 litros para el primer semestre del año y de esta apta para el consumo fueron 239 litros (67,84%), lo que indica pérdidas del 32,16%. El objetivo del presente estudio es mediante una revisión de literatura analizar el Sistema HACCP que contribuya a la detección y control de los posibles peligros en el procesamiento del alimento LHD, a partir de una investigación de tipo aplicada con un enfoque cuantitativo, luego se analiza la efectividad del sistema a nivel normativo. Finalmente, se determina la posible aplicabilidad del sistema HACCP a los BLH en Colombia, en aras de asegurar y aumentar la productividad y el rendimiento, con el fin de disminuir estas pérdidas, por lo tanto, es necesario realizar mayor control en cada una de las etapas de procesamiento; donde los riesgos microbiológicos asociados con LHD son similares a los de la industria alimentaria, por lo anterior se recomienda implementar la herramienta estándar de garantía de calidad tipo HACCP en el BLH del Hospital Federico Lleras Acosta “HFLLA” del Tolima, Colombia. The project addresses the challenges of industry 5.0 for the conservation of Human Milk (HL) food through a social responsibility approach aimed at feeding the neonatal population of the Neonatal Intensive Care Unit NICU by guaranteeing food safety and the standardization of processes. The current situation of the BLH of Tolima was identified, it was detected that the donated human milk (LHD) that enters the processing was 353 liters for the first half of the year and of this suitable for consumption there were 239 liters (67.84%), indicating losses of 32.16%.   The objective of the present study is, through a literature review, to analyze the HACCP System that contributes to the detection and control of possible dangers in the processing of LHD food, based on applied research with a quantitative approach, then the effectiveness of the system at a regulatory level. Finally, the possible applicability of the HACCP system to the BLH in Colombia is determined, in order to ensure and increase productivity and performance, in order to reduce these losses, therefore, it is necessary to carry out greater control in each of the processing stages; where the microbiological risks associated with LHD are similar to those of the food industry, therefore it is recommended to implement the standard HACCP quality assurance tool in the BLH of the Federico Lleras Acosta Hospital “HFLLA” in Tolima, Colombia.
