| dc.description.abstract | Finalmente se diseñó un plan de auditoria interna en base al cronograma de auditoria en inocuidad del sistema HACCP de la panadería la promesa establecidos en la fase 2, (Auditoria al sistema HACCP) donde se evidencio ocho hallazgos en la panadería la promesa que fueron enumerados y clasificados de acuerdo a la importancia del peligro que pueden llegar a ocasionar una inocuidad en el alimento, sobre estos hallazgos se realizo un trabajo detallado de justificación y el por que la importancia de implementar acciones de mejora o acciones correctivas encaminadas al cumplimiento de la auditoria interna. | |
