dc.description.abstractEl chontaduro (Bactris gasipaes) es una de las frutas exóticas más importantes para Colombia con 8428 ha sembradas que arrojaron una producción de 49041 ton durante el 2018. Su importancia alimentaria radica en el valor nutritivo del fruto, representado en altos niveles de fibra, ácidos grasos, proteínas, vitaminas, minerales y bajo contenido de sodio y azúcares (Yuyama et al., 2003); a tal punto de ser considerado el más balanceado de todos los alimentos del trópico. El objetivo de este trabajo fue caracterizar fisicoquímicamente, nutricionalmente el pasaboca de chontaduro obtenido por tres métodos diferentes de secado: liofilización (L), ventana de refractancia (VR) y convección forzada (CF); utilizando la osmodeshidratación como proceso previo. Se evaluó el efecto del método de secado sobre el contenido de humedad, fibra dietaría, vitaminas A y C, capacidad antioxidante y fuerza de fractura del pasaboca de chontaduro. Se encontró que los métodos de secado por (L), (VR) y (CF) presentaron diferencias significativas (α=0,05) sobre las variables de respuesta (fibra, vitaminas A y C) y las otras variables (Capacidad antioxidante y fuerza de fractura) no presentaron diferencias significativas. El mayor contenido de fibra, vitamina A y vitamina C se obtuvo por L 20,60 g/100g, 191,01 UI/100g y 10,83 mg/100g, respectivamente. En la capacidad antioxidante el valor mayor encontrado fue VR 3034,00 µmoles eq.Trolox/g, y el valor mayor de fuerza de fractura fue mediante la técnica de VR 218,35 N. La liofilización es el proceso más adecuado para la obtención de un pasaboca de chontaduro, con respecto a las características fisicoquímicas y nutricionales evaluadas en la presente investigación.spa

The purpose of this work was to physicochemically and nutritionally characterize the peach palm fruit snack obtained by three different drying methods: freeze-dried (FD), refractive window (RW) and forced convection (FC); using osmodehydration as a previous process. The effect of the drying method on the moisture content, dietary fiber, vitamins A and C, antioxidant capacity and fracture strength of the peach palm fruit snack was evaluated. It was found that the drying methods by freeze-dried (FD), refractive window (RW) and forced convection (CF) showed significant differences (α=0.05) over the response variables (fiber, vitamins A and C) and the other variables (antioxidant capacity and strength of fracture) did not show significant differences.
