dc.description.abstract | El propósito de este trabajo fue estudiar los procesos de secado por Liofilización, Ventana de Refractancia (VR) y Convección forzada en rodajas de banano, evaluando el efecto de las temperaturas usadas en los procesos de secado en las propiedades fisicoquímicas (Textura), nutricionales (fibra, vitaminas A y C, capacidad antioxidante) y microbiológicas. En la liofilización se trabajó con temperaturas de -40°C y un nivel de vacío de 130 micrones de hg, en la ventana de refractancia la temperatura del proceso fue de 90°C y en el secado convectivo las temperaturas fueron de 75 a 80°C. Se encontró que en los métodos de secado por liofilización, VR y convección forzada presentaron diferencia significativa sobres las variables de respuesta (fibra, vitaminas A y C) y en las otras variables de respuestas (Capacidad antioxidante y fuerza de fractura) no presentaron diferencias significativas. Los valores de la rodajas secadas por los tres métodos mostraron los siguientes resultados: Mayor contenido de fibra (L) 11.507g/100g, el mayor contenido de vitaminas A y C se encontraron (VR) 9.147UI/100g y 7.727mg/100g, en la capacidad antioxidante el valor mayor encontrado fue (VR) 2091.00µmoles eq.Trolox/g, el valor mayor de fuerza de fractura fue (L) 63.93 ± 9.60, y el valor del análisis microbiológico son (L) hongos 50 y levaduras 140UFC/g-mL, (VR) hongos menor que 10 y levaduras menor que 10UFC/g-mL y convectivo hongos menor que 10 y levaduras menor que 10UFC/g-mL, los resultados obtenidos por el análisis de varianza ANOVA que se obtuvieron muestra que el proceso de VR es un método eficiente para conservar dichas propiedades nutricionales del pasaboca deshidratado de banano. | spa |
